Pascal Jolivet Sancerre Sauvage

Pascal Jolivet founded his eponymous winery in Sancerre in 1987. With plots in some of the best locations in the Loire, it's no surprise his Sancerre and Pouilly-Fume wines are of such high quality. The 'Sauvage' is his wildest example of Sancerre - farmed organically, he lets the vineyard do the talking. Fermented using wild yeasts, with minimal sulphur and bottled unfined and unfiltered, this is sauvignon at its purest! Textural and with multiple layers, this is a fine wine, with elegance on the nose following through onto the palate, which has a racy finish.
